Ingredients
1 cup cooked chickpeas (165 g)
1/3 cup peanut butter (80 g)
2 tablespoons honey (30 g)
1 teaspoon vanilla extract (5 ml)
1/4 teaspoon baking powder (1 g)
1/3 cup dark chocolate chips (50 g)
Instructions
Preheat oven to 180°C / 350°F.
Add chickpeas, peanut butter, honey, vanilla extract, and baking powder to a blender or food processor.
Blend until the mixture becomes smooth and thick.
Transfer the dough to a bowl and mix in the chocolate chips.
Scoop small portions onto a parchment-lined baking tray.
Flatten the cookies slightly.
Bake for 10 to 12 minutes until lightly golden.
